Kale is a great low Glycemic food that can help keep blood sugar levels down. Consumers can enjoy the food without having to worry about a rise in the blood glucose levels, and comes in extremely low on the Glycemic Index. Additional health benefits to the food include a large amount of potassium (as much as a banana), fiber, iron, a fair amount of Vitamin A and C, and it is low in both fat and calories.
